What is a Ham Knife?

A ham knife - a professional knife for cutting ham - resembles a boning or filleting knife. The blade is long, narrow, and only a little bit flexible. This makes cutting with the knife simple. The blade's length ranges from 20 to 32 cm. Thanks to the long blade you can make a slice in a single motion. A flexible blade allows the knife to adjust to the ham's surface, achieving an extremely precise cut.

What should you take into consideration when shopping for a new ham knife?

There are a number of characteristic features you should look for when shopping for a new ham knife.

  • The blade

The length of a ham knife should be adequate to cover the full area of the cut. Knives for hams should be between 16 and 32 centimetres long. Their blades are narrow and often feature small groves that prevent slices from sticking. Some have rounded tips and remind a salmon knife and some have a sharp, pointed tip.

  • The handle

The handle of the ham knife should be extremely comfortable and ensure a firm grip. They should be non-slip and broad enough to fit in the hand for a secure grasp.

How to take care of your ham knife?

Kitchen knives are quite an investment so if you want your ham knife to last for ages, make sure you follow these simple rules for cleaning and storing your knives:

  • knives are often dishwasher-safe but we recommend you clean your knife by hand as dishwasher detergents can damage the surface of a steel blade
  • if a knife has a wooden handle, do not put it in the dishwasher
  • to prevent wooden handles from becoming dry, regularly oil them with linseed oil or beeswax
  • store your ham knife separately so that the blades do not get dull. Use a knife block or rack or a knife case
  • sharpen your knife regularly using a knife sharpener - Position the knife blade over the knife sharpener at a 15-degree angle and slide it along the blade from end to end. The direction of this movement must be constant at all times
  • use a cutting board that is knife-friendly and big enough to accommodate the ham that you want to slice

When slicing a ham you may also need a meat fork.
