WHAT IS FONDUE?

The word fondue comes from French and means melted. This word is pronounced [fondü]. Originally, cheese fondue was cheese melted over a fire and originated in Savoy in the French part of Switzerland, where fondue is now the national dish. The melted cheese is dipped into the meat or pieces of pastry. Today there is also chocolate fondue - pieces of fresh fruit such as strawberries, grapes, bananas, etc., are dipped into melted chocolate.

Melt the chocolate in a water bath, the cheese in a saucepan on the stove. It is recommended to use high quality chocolate for chocolate fondue intended for chocolate fountain preparation. You can use high cocoa dark chocolate, mild milk chocolate or delicious white chocolate, depending on your preference. Also use good quality cheese with a stronger flavour such as gruyère, emmental, raclette etc. You can also use several types of cheese, add spices or garlic.

Underneath the fondue pot is a candle or cauldron that heats the melted chocolate or cheese, maintaining the optimum temperature and consistency. Guests then dip the ingredients according to the type of fondue using serving forks. It is an ideal refreshment at family gatherings, parties, formal and informal parties. Fondue brings you together and entertains. What's more, you will pleasantly surprise your guests with something new and unusual. You can try new combinations and discover new flavours.

CHOCOLATE FONDUE RECIPE

500 - 600 g of good quality chocolate for the fountain (we recommend high-percentage chocolate, but those who like it can use milk or white chocolate), 1 - 1.2 kg of fresh fruit (strawberries, bananas, grapes, etc.), 100 g of steamed nuts - optional

Procedure:
1. Melt the chocolate in a water bath and pour it into the fondue bowl.

2. Clean and chop the fruit, chop the nuts. Pour everything into a bowl and bring to the table with the chocolate.

3. Each guest uses a fondue skewer to dip the fruit in chocolate and coat it in chopped nuts.

RECIPE FOR CHEESE FONDUE

500 g Swiss cheese, e.g. gruyère (coarsely grated, thinly sliced or finely chopped), 500 g Emmental cheese (grated), 3 tablespoons of plain flour, 1 teaspoon of grated nutmeg, ½ teaspoon of ground white pepper, about 300 ml of dry white wine, 3 large cloves of garlic, finely chopped, 1 baguette or rye bread (cut into cubes), pickles, pickled vegetables to snack on and white wine to drink

Procedure:
1. Mix both cheeses, flour and spices in a bowl. In a heavy-walled heavy saucepan, bring most of the wine and garlic to the boil over a low heat. Whisk in the cheese a little at a time and let it melt over a low heat, stirring constantly. After each batch, whisk until smooth. If necessary, add the remaining wine by spoonfuls. Transfer to a fondue pot and keep warm.
