Citrus peel - tips:

• For citrus peel, choose citrus fruits that have not been chemically treated
• Wash the fruit thoroughly under cold running water
• Lightly scrub off any grease and dirt with your fingers
• Dry thoroughly
• Gently grate the surface citrus peel
• Be careful not to hit the bitter white layer of the skin, which is just below the rind
• Gradually turn the fruit until you get the desired amount of peel
• Use the fine shavings for cooking preferably immediately, while the bark is fresh and aromatic
• Use the fruit without the peel to obtain a delicious juice
• Clean the grater with a sponge under running water
