Kampot Black Pepper from Cambodia

Kampot pepper from the Cambodian province of Kampot gained its excellent reputation even before the Khmer Rouge took over Cambodia and trade in the country was almost stopped. In 2004 a Frenchman decided to bring together farmers with several pepper plantations under the Farmlink project in order to revive production in the region. Based on Gérard Vives' recommendations he decided to focus on a high-quality operation with several sorting processes: on the plant - after harvest, before drying and after drying. Following the advice of experts, he has changed the working practices of
growers and as a result some of the province's plantations have reached exceptional levels of quality. Growers do not use any pesticides or chemical fertilisers. The whole process is natural. A mixture of waste from rice fields and plants is used as fertilizer. New soil is added regularly and watered by hand.

Tips and use

It is suitable for red meat, slow cooked dishes, cold dishes, fatty fish (mackerel, sardines, anchovies, tuna, eel, etc.). This pepper is also excellent for flavouring dark sauces, tomato sauces, marinades or pizza. It is also recommended for flavouring vegetables (red cabbage, lentils, chickpeas), fine white cheeses and some fruits (strawberries, cherries, figs and melon). It can also be used in chocolate desserts.

About the taste

Pepper with sweet, heady, and slightly floral tones. In the mouth it gives the impression of marshmallow while the taste gradually gains in intensity.

White Sikara pepper from Madagascar

Origin and history

Green pepper cultivation is more typical of Madagascar. When growing white pepper, it is necessary to let the pepper ripen in order to get large peppercorns. Gérard Vives has established a system of collecting the best grains in various places, which are then soaked in fresh water, washed, dried in the sun and finally carefully sorted. This process produces a rare and exceptional white pepper.

Tips and use

It is suitable for clams, oysters, white meat, poultry, white fish, pork and veal and white sauces. Excellent flavouring for pasta, rice, steamed vegetables, grilled vegetables, squash, pumpkin, mushrooms, asparagus, scarlet or regular beans, tomatoes and salads. We also recommend using it on desserts containing oranges and pears.

Wild black pepper Voatsiperifery from Madagascar

Origin and history

This pepper grows wild and produces small berries with a petiole. It can be found in the warm and humid areas at the foot of the mountains of southeastern Madagascar. Creeping plants use the trees of the rainforest for support. Sometimes they can grow up to 20 metres high making it very difficult to collect peppercorns. Processing wild pepper is not an easy process because the peppercorns contain a lot of water and are very fragile. For producing one kilogram of dry spice is needed ten kilograms of fresh pepper
grains. This type of pepper is extremely rare.

Tips and use

You can use it in seasonal salads and it also goes well with meat especially pork and lamb but also with white fish. It is excellent with foie gras. The most suitable vegetables for spicing up with this pepper are tomatoes. It is also an ideal addition to soft white cheeses. It is particularly suitable for goat and sheep cheese. It is excellent in pates, terrines, compotes, pickles and pickled vegetables. The most surprising use is in desserts containing fruit (melon, strawberries, cherries, apples, pears) and especially chocolate.

About the taste


Its aroma is classically peppery but has an unusual woody, resinous and earthy note. It contains traces of citrus, fruits and flowers. Its fresh taste lasts for a long time. The onset of the spicy taste is not sharp, but it is penetrating and lingers for a long time. This wild pepper is not
as strong as black or white pepper. Despite the brimming aromatic profile, its berries are very easy to use.

The mechanism consists of a double-row toothed spiral that perfectly guides and holds the individual peppercorns. The steel from which the mechanism is made is specially treated with a patented anti-corrosion process. As a result, the mechanism retains its sharpness and durability.

What pepper to use?

For ideal results, use peppercorns with a diameter of 5 mm or less. You can use black, white or green pepper. Mixtures of coloured peppers should not contain more than 15% pink (red) pepper. Dried coriander can also be ground in Peugeot pepper mills.
