Samura knives are made from the finest Japanese and Swedish steel, hardened to 58 - 61 HRC. The blades have a Japanese shape and a gentle taper from the tip, which gives them fantastic cutting performance. Samura knives are sharpened at an angle of 17 degrees. This is more than Japanese knives, but less than European knives. The best modern materials are used for the handles: Micarta, G10, stabilized wood, plastic with a fine finish, Kraton and composites.
The Samura MO-V slicing knife has a narrow, straight and long (23 cm) blade, making this knife ideal for slicing roasted or cooked ribs, beef, ham and turkey, chicken and fish. Essential for preparing Japan's national dishes, including sushi, sashimi and rolls, it is also able to effortlessly separate a large portion of meat. Its oval blade does not twist in the palm of the hand, allowing you to carefully control the slicing process and easily manipulate the knife.
